Ingredients
- One large cooking apple
- One cinnamon stick
- 100g caster sugar/brown sugar
- 50g butter
- 100g plain flour
- 250g oats
- 120g butter
- 120g light brown sugar/caster sugar
- 3tbsp golden syrup
- Icing sugar (to serve/optional)
Method
- Preheat the oven to 180degrees.
- Chop the apple into small cubes and place in a large pan with a splash of water, 100g of sugar and a cinnamon stick.
- Cook the apple mixture down until it turns into a jam like consistency and leave to one side to cool.
- Rub the 50g of butter together with the 100g of plain flour until it reaches a fine breadcrumb consistency and leave it to one side.
- Add the oats, 120g of butter, 120g of sugar and the golden syrup to a food processor and blitz until combined. You could hand mix this but it combines so much better in a food processor (I used a small food chopper).
- Grease a small tin with butter and scoop the oat mixture into the tin.
- Spread this evenly across the tin and squash down using a metal spoon, make sure it’s really compact!
- Bake the flapjack in the oven for around 5 minutes.
- Once the flapjack is part baked, remove from the oven.
- Evenly spread the apple mixture (cinnamon stick removed) on top of the flapjack using a knife.
- Sprinkle the crumble mixture on top (just a light covering) and bake again for a further 10 minutes.
- Once baked, leave to cool completely before removing from the tin.
- Slice the flapjack (I did 6 slices) and place on a plate to serve.
- Sprinkle with icing sugar and enjoy!
